This was the perfect dish to munch on right before we watched the first episode of the new of Game Of Thrones last week. My mate Flick actually put this together for us and before the big viewing. This can also be made with courgetti of course but if you don’t have a spiralizer then a peeler works perfectly to create ribbons. This is healthy for a Monday night and it takes a few minutes to prepare. Courgettes are in season at the moment so this is the perfect dish to make!

Serves 2

Ingredients:

3 medium courgette, spiralized or peeled into ribbons

2 small cloves garlic, diced

Zest and juice of a lemon

200g cherry tomatoes, halved

handful fish basil leaves,

2 tbsp chopped chives

handful flat leaf parsley leaves

1/2 chopped chilli, deseeded

360g shelled king prawns

3 tbsp extra virgin olive oil

sea salt and black pepper

Courgettes are full of water so I like to lay the courgetti or ribbons out on kitchen towel and sprinkle over with salt to leave for 5 minutes to allow the excess water to come out. Then dab the water away with kitchen towel.

While the courgettes are on the paper towel you can begin with the prawns. Set a large frying pan to a medium to high heat adding two tablespoons of olive oil followed by the garlic and chilli. Fry for 2 minutes before adding in the prawns and fry for 2 minutes before tipping in the tomato halves. Mix everything around the pan for 2-3 minutes squeezing over half the lemon and the prawns should be cooked. Scrape everything into a bowl and add in the courgette ribbons to the pan frying them for about 2minutes. Next tip back in the contents of the bowl, the fresh herbs, lemon’s zest, juice, salt and pepper using tongs to mix everything together and serve straight away.
