Gorillas Spicy Peanut Sauce Rice Bowl

I’m still using up the veg from my @gorillasapp.uk fresh food delivery this week which was hand delivered by bicycle. I threw together this easy rice bowl with roast aubergine, greens, avocado, grated carrot, coriander and dressed it with peanut sauce. You can use whatever veg you have for this and the sauce is especially good with noodles. Check out Gorillas website here.

Serves 1
1/2 a garlic clove, thinly sliced
1 tbsp sunflower oil
1 tsp chilli flakes
2 tbsp peanut butter
2 tbsp sesame oil
3 tbsp soya sauce
2 tbsp white wine vinegar
1 heaped tsp grated ginger
Zest of half a lime and 2 tbsp juice

Add a small saucepan to a medium to hight heat and add the sunflower oil. Turn the heat to medium and add the sliced garlic to gently simmer for 10 seconds. Then add the chilli flakes and simmer for another 10 seconds before adding to a bowl. Add the remaining ingredients for the sauce and whisk together with a fork until smooth. This keeps for 4 days in the fridge.
