Butter Chilli Chicken, Mozzarella Salad with Greens, Toasted Cashews, Butter Beans, Chipotle Dressing
Go big or go home! It’s Friday, so I made an extra special salad with chicken fried in @allthingsbutter__'s chilli butter. It is fantastic for frying—so delicious! This hearty salad works perfectly for lunch or dinner, and the chipotle dressing is great for carrying chunky salads. It's also amazing with lentils!
Serves: A greedy 1
Ingredients:
Salad:
Handful of rocket
Handful of lamb's lettuce
4 radishes, sliced
1 chicory, sliced into quarters
80g butter beans
Handful of toasted cashews
1/2 ball mozzarella
1/3 avocado, sliced
100g roast cauliflower (leftovers work great)
Dressing:
1/2 tsp chipotle paste
2 tbsp lemon juice
3 tbsp extra virgin olive oil
1 tbsp apple cider vinegar
Pinch of salt
Chicken:
1 chicken breast, at room temperature (bash down the top to equal thickness)
10g @allthingsbutter__ chilli butter
1 tbsp groundnut oil
1 garlic clove, thinly sliced
Salt and pepper to taste
Instructions:
Prepare the Dressing: In a small bowl, mix all the dressing ingredients together.
Chop the Salad: Add the rocket, lamb's lettuce, radishes, and chicory to a chopping board and chop them up. Add to a large bowl along with the butter beans, toasted cashews, avocado, and roast cauliflower. Toss with the dressing until well coated.
Cook the Chicken: Set a large frying pan to medium-high heat. Season the chicken breast well with salt and pepper. Add groundnut oil to the pan, and when hot, add the chicken. Fry for 2.5 minutes on one side, then turn over and fry for another 3 minutes. Use a spatula to press down on the breast to ensure even cooking.
Add Butter and Garlic: Reduce the heat, add the chilli butter to the pan, and let it melt, basting the chicken with the butter for 1 minute. Add the sliced garlic and fry for an additional minute. Remove from heat, cover, and let rest for 5 minutes.
Assemble the Salad: Slice the rested chicken and add it to the salad along with any pan juices. Tear over the mozzarella for a creamy finish.
