Sesame Aubergine & Sweet Potato One Tray with Peanut Sauce
This is what you make when you have some veggies coming round for a weeknight dinner. I served it with brown rice, a green herby salad, and fried tofu. Obviously, a pot of Saucy adds a lil’ summin’ summin’, but this peanut sauce has loads of flavour with or without the added chili oil. This is a great dish to make because it’s simple, but the veg looks a bit fancy.
Ingredients:
Serves 2
Main:
3 tbsp olive oil
1 large aubergine, cut into quarters lengthways
1 sweet potato, cut into quarters lengthways
2 spring onions, thinly sliced
4-5 tbsp sesame seeds
1 tsp garlic powder
Salt and pepper to taste
Peanut Sauce:
2 tbsp crunchy peanut butter
3 tbsp toasted sesame oil
2 tbsp rice wine vinegar
Zest of 2 limes + juice of 1.5 limes
1 tbsp grated ginger (1 large thumb)
1 small garlic clove, grated
4 tbsp tamari soya sauce
1/2 tsp Peanut Salsa
Instructions:
Preheat Oven: Preheat the oven to 190°C (375°F). Add the sweet potato wedges to a baking tray. Cover with 1 tbsp olive oil, 1/2 tsp garlic powder, salt, and pepper. Place in the oven for 15 minutes.
Prepare Aubergine: Season the aubergine pieces in the same way as the sweet potatoes and add to the tray. Roast for an additional 20 minutes.
Add Sesame Seeds: Drizzle a little more olive oil over the vegetables. Add sesame seeds to a bowl and coat each veggie wedge in the seeds. Place back into the oven for 15 minutes or until both vegetables are cooked.
Make the Peanut Sauce: While the vegetables are roasting, add all of the sauce ingredients to a bowl and whisk together until combined. Taste to check the seasoning.
Plate and Serve: Spread the peanut sauce on a plate and arrange the roasted vegetables on top. Garnish with chopped spring onions and a lime wedge.
