Romanesco Broccoli Quick Side Dish

Almost too pretty to eat!  A sort of cross between broccoli and cauliflower.  If you are wondering WAT to do with it then this is quite a good side dish or even a quick healthy lunch.  It is great with fish and you can swap for normal broccoli or cauliflower.

Serves 2 as a side

Ingredients:

1 romanesco broccoli

1 organic chicken stock cube

1-2 tbsp jalapeno peppers, roughly chopped

1 tbsp chives, finely chopped

1 garlic clove, diced

2 tbsp extra virgin olive oil

Few drops lemon juice

Pinch of dried chilli flakes

Sea salt and black pepper

Cut broccoli into equal sized rosettes and place into a saucepan with some newly boiled water until they are just covered.  Stir in the chicken stock cube and boil for 5 minutes until soft.  Drain and set a frying pan onto a medium to high heat.  Pour in a tablespoon of olive oil and add the diced garlic clove.  Let this fry for a 1 minute before adding the romanesco and cook for about 3 minutes seasoning with salt and pepper.  Plate up with the broccoli and sprinkle over the chopped chives, jalapeño peppers, chilli flakes, last tablespoon of olive oil and a few drops of lemon juice.
