Spicy Sesame Rice Bowl
I always get asked about healthy lunch ideas and this is a winner that I make every week. It’s like I say in my Saucy cookbook when you have a few good kinds of vinegar, oils and pastes, you can knock up a whole range of delicious dressings and make some very simple food exciting. This is what I used today but use whatever veg you have. A mandoline is essential for getting raw veg extremely thin quickly!

Serves 1
Ingredients:
1 carrot, grated
1/2 an avocado
Handful thinly sliced white cabbage (I used a mandoline)
100g short-grain brown rice
Handful coriander
Handful cooked broccoli and cauliflower
Handful baby spinach
Handful chopped cashews
1 tsp white sesame seeds
1 tsp black sesame seeds
For the dressing:
5 tbsp sesame oil
1 tbsp spicy sesame chilli oil
1 tsp white miso paste
1 tbsp soya sauce (tamari)
1 tbsp Japanese rice vinegar
1 tsp freshly grated ginger
1 tsp maple syrup
Zest and juice of half a lime
Add the dressing ingredients together into a small bowl and mix everything together checking the seasoning. Prep the veg and add to a bowl. Drizzle over the dressing and eat!
