September Cashew Porridge

I feel I need to big up the word porridge. This may sound boring but, TRUST ME, this is a delicious way of enjoying the last of the fresh berries in season. Also try finding cashew milk because it adds to the creaminess. This is such a comforting breakfast.

Serves 1
Ingredients:
100g oats (1 cup)
400ml cashew milk (I used Rude Health)
90g raspberries
60g blackberries
Squeeze lemon juice
Half a banana, sliced
Pinch cinnamon powder
Handful chopped walnuts
1-2 tbsp maple syrup

Add the oats into a saucepan along with the milk. Cook on a medium to high heat until soft while stirring all the time. Usually around 3mins.
Add berries into small saucepan with lemon juice. Cook on high for. 3-4min until berries just burst and soften but still keep shape. Add porridge to a bowl, top with berries, banana, nuts, maple syrup and sprinkle over cinnamon.
