Swede Coconut Curry
If you are wondering what to do with the swede that’s knocking about at the back of the fridge, try this very simple but tasty 5 ingredients coconut curry.
Ingredients:
Vegan/GF
Serves 2
2 red onions, diced
1 swede, peeled and cut into 1-2cm pieces
1 tin coconut milk
200ml vegetable stock, hot
1 tsp turmeric powder
(salt, pepper + olive oil)
Preheat oven to 190 C degrees and add swede to a baking tray. Drizzle over the oil, salt and pepper. Roast for 25-30mins until soft.
Set a large saucepan to medium heat and add 3 tbsp oil. Then add diced onion and fry for 5mins.
Add stock, coconut milk, turmeric, roast swede, season generously with pepper and a bit of salt, Bring to the boil for 1 min and then serve. Add raw spinach and rice.
