Lemon Fried Baby Artichokes
These are so so delicious and actually reasonably quick and easy to make. These little artichokes cook much faster than the bigger ones and they are made for these flavours!

Ingredients:
X2 artichokes
2 lemons
2 chunky garlic cloves, diced
5 tbsp olive oil
2 tbsp white wine
Salt + pepper
A little chopped parsley to finish
Add some cold water to a small bowl. Half a lemon and squeeze the juice of both halves into the water. Prep the artichokes! Start peeling back the outer leaves until you start to reach the softer ones. This is about halfway. Slice off the top leaving about 4-5cm of the veg from the stem. Use a peeler to peel the stem and trim it to 3-4cm long. Cutaway any tougher smaller leaves tucked underneath. Slice artichoke in half lengthways and place straight into the water. The lemon water stops it from going black.
Set a frying pan with a lid to medium heat and add the olive oil followed by the artichokes cut side down. Leave to fry for about 2-3mins. Then pour in a little of the lemon water to about 1cm around the artichokes and add the wine. Turn down the heat to a simmer. Slice up the second lemon into 1cm slices and add this to the pan. Cover with a lid leaving a small gap for 8 mins. Remove the lid, then add the garlic and move everything around so that the artichoke soaks up all the flavours.
Fry for another 3mins and the artichokes should be cooked through. You can pierce one gently with a knife to check. Season with salt and pepper. Serve with a little parsley on top and any leftover cooking juices!
