Goat's Cheese Salad
Make sure you use a goat's cheese for the salad which isn't too gooey for this otherwise it will just spill all over the oven. It needs to be a little firm for the grill!
Serves 1
Ingredients:
3 sliced goat's cheese (I bought a UK-aged ash version from @eatmorebritishcheese )
1 slice of toast
300g lettuce (I used castlefranco, radicchio)
80g green beans, blanched for 3 mins
100g radishes, sliced in half lengthways
a handful of walnuts, roughly chopped
salt + pepper
1 tbsp extra virgin olive oil
For the dressing:
1 tsp Dijon mustard
1 tsp grainy mustard
1/2 tsp honey
1 tbsp white wine vinegar
4-5 tbsp extra virgin olive oil
1 tbsp Saucy Chilli Oil, optional
Mix all the dressing ingredients together into a bowl.
Prep all the salad bits.
Add the bread under the grill (around 230C) for 1 min. Then remove and add the cheese slices on top, a bit of salt, pepper and splash of olive oil. Place under the grill for about 2-3 mins or until it has coloured a little and is bubbling.
Dress the salad in 2/3 of the dressing and plate up. Top with the toast sliced in half and a last bit of dressing in top.
