Tuna Steak Sandwich
I'm basically creating my dream sandwiches in this series. This is a treat so make sure you buy some quality tuna and don't overcook it. I purchased mine from @finandflounder .
Ingredients:
180g tuna steak (cooking times are for a thick fillet, so do less if thiner)
x2 heaped tbsp kimchi
1 pak choy, sliced lengthways to 1/2cm thick
80g shaved white cabbage (with mandoline)
handful radish sprouts
x2 handfuls white bloomer
salt + pepper
Crunch:
4 tbsp sesame seeds white + black
1 tbsp sunflower/sesame oil
1 tbsp soya sauce
Lime mayo:
1 large egg yolk (very fresh)
220ml sunflower oil
x2 pinch sugar
1 tbsp white wine vinegar
1/4 tsp grated garlic
zest of 2 big limes + juice of 1
Start with the mayo. Add the yolk into a clean dry bowl and start whisking. Slowly dribble in a little of the sunflower oil at a time until the mix begins to thicken. Then add the sugar, vinegar, garlic, lime zest + juice.
Then finish beating in the rest of the oil. Season generously with salt + pepper.
Set a frying pan to medium to high heat and add the sesame seeds + fry for 30secs-1min until just lightly toasted. Careful, they burn easily. Add to a bowl + mix in the oil + soya sauce.
Use the same pan and fry the sliced pak choy in a spoon of oil + salt, and pepper until soft.
Again with the same pan, set back onto medium to high heat + add 1 spoon of sunflower oil. Season the tuna steak with salt + pepper. Add to the hot pan and sear for 2 mins on each side + use tongs to sear the sides. Set onto a plate for 4mins to rest. Thinly slice!
Start loading up the sarnie. Bread, then splash of sesame oil + pinch of salt. Then mayo, tuna, sesame crunch, kimchi, fried Pak Choy, cabbage + sprouts! Season the top with a squeeze of lime, salt and sesame oil. Top with bread!
