Harissa Chickpeas With Poached Eggs
This is easy, full of flavour and basically very tasty. It’s not rocket science so get some good eggs and chickpeas yeah?! Bon appétit!

Serves 2
Ingredients:
2 poached eggs
2 tbsp olive oil, plus extra for serving
400g cherry tomatoes, halved
4 cloves garlic, thinly sliced
350g chickpeas (always Bold Bean!)
2 large tsp harissa paste
4 tbsp plain yoghurt
Salt and pepper
Set a large frying pan to a medium heat. Add the olive, then the tomato halves. Cover and simmer for 6 mins. Then add another spoon olive oil and add garlic. Cover again for 3-4mins. Then add harissa, chickpeas and season with salt and pepper. Simmer gently for 1-2mins.
Get the eggs poached!
Divide between two plates and eat with a few spoons of yoghurt and more olive oil, sesame seeds. Maybe some toast!
