Mexican Style Hot Breakfast Taco
Why don’t I do this more often?! Unbelievably delicious breakfast on the table in a few mins. Cheddar cheese, black beans with cumin and chilli oil are winners together.
Serves 1
Ingredients:
1 tbsp olive oil
1 soft taco (I have been using Gran Luchito ones )
3 tbsp black beans, drained
Good pinch cumin powder
1 tsp Saucy Chilli Oil
2 tbsp grated cheddar
1 medium egg
1/3 avocado, sliced
Few coriander leaves
Squeeze of lime
Set a large frying pan to a medium heat to high heat.
Add the taco, followed by the beans, cumin, pinch salt, chilli oil, cheese and egg.
Cover for 2mins until egg is cooked and cheese starts to just melt.
Add to plate and top with avocado, coriander, lime, salt and more chilli (optional).
