Pan Con Tomate

A very satisfying summer breakfast or brunch or lunch or dinner. The quality of ingredients matter here if you are looking for maximum enjoyment. I sometime blend cherry tomatoes for 20 secs for this but it depends what mood I’m in.

Ingredients:

1 slice of sourdough toast

1 small garlic clove

1/2 a good quality tomato, grated

1 tbsp extra virgin olive oil

3 very fancy anchovies

1 tbsp capers

Pepper and small pinch salt (optional)

I only rub the hot toast with the garlic clove once. I think you only want a very gentle garlic flavour. It doesn’t need much to make an impact. Top with the tomato pulp, anchovies, capers, salt and black pepper. Finish with a drizzle of olive oil.
